5 High-Protein Vegan Breakfasts Ready in 10 Minutes

Confession: for years my breakfast was toast and jam. Lovely toast. Excellent jam. A relationship built on crumbs and false promises. Because by 10:30 I was rummaging through the cupboards like a raccoon who’d heard a rumour about biscuits.

Turns out breakfast is where most of us quietly fall short on protein, and after 50 that matters more than ever (the full story is coming in next Tuesday’s big protein article, and yes, there will be lentils). The good news: a high-protein plant-based breakfast doesn’t need a chef, a blender the size of a jet engine, or getting up before the birds. Here are my five favourites. Each one takes 10 minutes or less and gives you around 20 g of protein or more. No raccoons were harmed.

1. Protein Porridge (about 24 g)

Porridge with berries, seeds, almonds and cacao nibs

Cook 50g porridge oats in 250ml soya milk. Stir in 3 tbsp hemp seeds, top with berries and a drizzle of maple syrup. It’s a warm hug in a bowl, with the staying power of a very determined aunt. Why not also add a very conservative spoonful of cacao nibs?

Tip: use soya milk, not oat or almond. It has around three times the protein, and your 11 am self will write you a thank-you card.

2. Speedy Tofu Scramble (about 22 g)

Crumble 150g firm tofu into a hot pan with a little olive oil, a pinch of turmeric, black pepper and a handful of spinach. Serve on a slice of wholegrain toast. It looks suspiciously like scrambled eggs, which is either reassuring or unsettling, depending on your relationship with tofu.

Tip: a sprinkle of nutritional yeast makes it taste « eggy » and cheesy. Don’t ask how. Just enjoy.

3. Peanut Butter Power Toast (about 20 g)

Wholegrain toast with peanut butter, banana, berries and seeds

Two slices of wholegrain toast, 2 tbsp peanut butter, sliced banana and a sprinkle of pumpkin seeds, with a glass of soya milk on the side. Basically what a well-organised eight-year-old would choose, but with seeds for credibility.

Tip: this is the one for mornings when you can barely find the kettle, let alone a frying pan.

4. Soya Yoghurt Seed Bowl (about 20 g)

200g plain soya yoghurt, 2 tbsp hemp seeds, 1 tbsp ground flaxseed, a handful of walnuts and fresh fruit. Stir. Eat. Feel smug. No cooking at all, which makes it the official breakfast of people who are « running a bit late » (all of us, always).

Tip: choose unsweetened yoghurt and let the fruit do the sweetening. Your taste buds adjust faster than you’d think.

5. Chickpea « Smash » on Toast (about 20 g), my favourite!

Mash half a tin of chickpeas with lemon juice, olive oil, salt, pepper, a pinch of chilli flakes and a pinch of ground cumin. Pile onto wholegrain toast and top with tomatoes and a spoonful of hummus. It’s avocado toast’s cooler, more affordable cousin, the one who turns up to the party and actually helps with the washing-up.

This is the one I keep coming back to. It’s zesty and filling, and there’s something deeply satisfying about smashing things first thing in the morning. Legally. With a fork.

Tip: make a batch of the smash on Sunday. It keeps for 3 days in the fridge, which means three mornings of looking impressively organised.

Wrap-up

Five breakfasts, ten minutes, and no more mid-morning biscuit raids (well… fewer, let’s be realistic). Pick one to try this week, and if you want the full story on why protein matters so much after 50, next Tuesday’s article has you covered.

Your questions, answered

Is oatmeal gluten free?

Oats are naturally gluten free, but they’re often grown and milled alongside wheat, so they can pick up traces. If you avoid gluten, choose oats labelled « gluten free ». A small number of people with coeliac disease also react to oats themselves, so check with your GP or dietitian.

How long do overnight oats last?

Up to 3 days in a sealed jar in the fridge, so you can make a few at once. Add fresh fruit and crunchy toppings on the morning you eat them.

Can I make tofu scramble ahead?

Yes. It keeps for 3 days in the fridge and reheats in a couple of minutes in a pan or the microwave. A splash of plant milk brings it back to life.

What if I’m not hungry in the morning?

Start small: a few spoonfuls of soya yoghurt with seeds, or half a slice of peanut butter toast. Protein in the morning helps keep us full and protects our muscles, but it doesn’t have to be a feast.
